Eating well and eating right are all about good choices, but I found myself in a rut eating the same old egg white/Eggbeaters™ omelets and I wanted something special that wasn’t going to break the bank from a calorie (or Weight Watchers™ points) perspective. So I came up with a just slightly decadent and tasty breakfast dish that wasn’t too hard on the points.

Last Sunday’s Baby Blues comic showed the harried mother of 3 working out like a demon. When her husband inquired she said she was getting ready for Valentine’s Day. His mind went to lingerie and lipstick, hers went to mowing through an entire heart shaped box of chocolates.

Eggs Bechamel, serves 2

2 Tsp. butter

1 tsp. flour

1/8 – ¼ c. skim milk

1 wedge Laughing Cow Swiss cheese

¼ c. Cabot Reduced Fat grated cheddar cheese

4 eggs

1 c. sliced mushrooms

1 c. baby spinach or arugula

2 slices light bread

Put a pot of water for poaching the eggs on the stove to boil.

For the sauce:

Melt butter in a non-stick saucepan, sprinkle flour and whisk until combined. Add 1/8 c. milk and whisk over medium high heat until mixture starts to thicken. Add both cheeses to the pan, crumbling the Laughing Cow wedge into smaller pieces. Stir with a spoon until cheeses melt (using a whisk will cause the Laughing Cow cheese to get stuck in the wires). Taste and season as necessary. You can use salt, pepper, smoked paprika or any herbs you may have around. If sauce is too thick thin it with the remaining milk to your desired consistency.

For the eggs:

Once water has boiled turn the heat to simmer and the 4 eggs to the water to poach. If you’re not a fan of poached eggs you can use hard-boiled eggs that are still warm. While the eggs are poaching make the vegetables and toast.

For the toast and vegetables:

Put 2 slices of light bread in the toaster. Heat a small frying pan sprayed with Pam. Sauté mushrooms until starting to brown and add spinach or arugula, sautéing until starting to wilt. Keep warm until eggs are done to your desired runniness.

Assembling the dish:

Put one slice of toast on each plate. Top with ½ of the sautéed vegetables and 2 poached eggs (or sliced hard-boiled eggs). Reheat cheese sauce until smooth and pour over the poached eggs. Top with cracked black pepper and serve.

The total WW points for the dish is 8, and that is if you use all the sauce (which I did not). You can skim 2 points if you use one egg, and lose another point if you skip the bread. After all, it’s all about the cheese sauce, isn’t it?
