We’d traveled recently; two spots in Florida to visit friends (my “brother” Mark and his wife Jan) in Naples and stay with friends renting a condo in Pensacola Beach. I will be sharing some of our travel fun at a later date, but for now I’m sharing a recipe Jan asked for. She and Mark traveled to New England not long after we’d visited and we had a chance to enjoy a day together in our backyard. The grill was put to use and the results were quite tasty!

I needed to be saved from the potato salad, as I could happily disappear into a closet with the bowl and a fork. If no one sees you eat it in the closet do the calories count?

The appetizer was a free form sort of pizza; I’d seen a recipe recently that I augmented and changed up a bit, and we were all happy with the results.

Grilled Peach, Mozzarella & Prosciutto Pizzas

6 Naan Bread – Mini Size

3 almost ripe Peaches or Nectarines, sliced into wedges

16 oz. Fresh Mozzarella (I use the pre sliced)

6 Slices Prosciutto, chopped

Balsamic Vinegar, or Sherry Vinegar mixed with Honey

Chopped Fresh Rosemary

 

Heat, clean and oil the hot grill.

Grill peaches until lightly charred, remove and cover with foil.

Clean grill and re-oil.

Place Naan on grill and heat until slightly browned and hot. Remove to a baking sheet.

Assemble pizzas: Place a couple of slices of mozzarella and chopped prosciutto (equaling one slice) on each Naan. Place on a raised rack or on the cool side of a large grill, or under the broiler until the cheese melts and the prosciutto crisps up.

While cheese is melting chop the peaches.

Remove Naan from grill or oven and place 1/6th of the peaches on each Naan, sprinkle with a bit of Rosemary, and drizzle Balsamic or Sherry vinegar/honey mix to taste.

Sprinkle with salt and pepper, cut each Naan into quarters and serve.

The rest of the meal consisted of arugula, tomato and Parmesan salad with lemon-basil dressing, pork tenderloin stuffed with provolone, roasted red peppers and green olives, local sweet corn, and potato salad. For dessert I made a tasty pudding, cream cheese whipped with sugar, lemon zest, lemon juice and vanilla into which you fold cool whip and blueberry sauce. I topped it with more blueberry sauce. What is summer for if not gilding the lily?
